L'abbiamo rifatta.  Consiste in un gruppo di blogger e appassionati di cucina, tutti facenti parte del gruppo "Cavoletti Firenze" e fans del Cavoletto di Bruxelles, che si ritrovano a turno a casa di qualche membro e che cucinano  assieme.

E' inverno, e' freddo, siamo ancora in clima natalizio-capodannizio-befanizio e un bel risotto e' quello che ci vuole.
Bello caldo e cremoso, con sapori di sostanza e con aromi adatti al periodo.
L'idea era di creare un risotto bilanciato tra l'asprigno e il dolcino, con un tocco di profumo agrumato.

Che vuol dire Sciglia'?   Mi dicono che significhi scompigliare. Propriamente significherebbe scompigliare i capelli, ma viene usata anche per definire gli scialatielli, una pasta fresca tipica della costiera amalfitana che nel piatto e' sempre, appunto, piuttosto scompigliata.

Era un po' che volevo presentare una torta di legumi e, siccome sono nel mio "periodo cumino" l'ho fatta bella speziata.
E' un piatto unico, a base di due  qualita' di fagioli (o tre, se vi va), con aggiunta di mais. Con questa ricetta partecipo al contest dell'amica Cristina, dove si chiedono ricette nelle quali siano abbinati pesce povero e formaggi o latticini.
Tema difficile e stimolante, tanto che ho abboccato con tutte le scarpe.

Le Scole sono un dolce tipico della zona di Pistoia, di solito prodotto nel periodo pasquale. Ospito qui una ricetta di Emanuela, gia' presente con sue ricette in questo blog.
In essenza le Scole sono dei panini semidolci, simili a tanti altri che si trovano a Pasqua.
Ma questi sono diversi. E, secondo me, buonissimi.

Nel contest si chiedeva di realizzare delle ricette che abbinassero pesce povero e formaggi o latticini. Abbinamento per niente facile...

Veramente "bucatini delicati" sarebbe una contraddizione in termini....

Come forse avrete visto in questo post   siamo stati qualche giorno in Portogallo, un Paese che ci e' rimasto nel cuore.

Margarida e' una cara ragazza che abbiamo conosciuto in Portogallo.  Siccome si era mostrata interessata al mio hobby "cuciniero", e in particolare ai risotti, ho inventato un risotto col suo nome.
I risotti in Portogallo sono piuttosto rari, da loro il riso viene bollito e fa da accompagnamento agli ingredienti principali. Insomma, non e' il protagonista. Figuriamoci se prima o poi non capita qualcuno che dobbiamo invitare a fermarsi per la cena. Ce la dobbiamo cavare in velocita' e con quello che c'e' in casa.
E come se non bastasse vogliamo stupire l'invitato -definiamolo cosi'- con qualcosa di nuovo e buono da ricordare.

Dopo aver pubblicato nell'ultimo post un dessert di fichi del tutto sperimentale (io se non invento non mi diverto) mi sono posto il compito di sperimentare un nuovo antipasto salato, sempre a base di fichi.

Tutto e' cominciato quando Anna Maria ha ricevuto in dono una cassettina di fichi appena colti, sia verdi che neri.
Mentre lei si preparava per fare i fichi caramellati da invasettare, versione standard, lo scienziato pazzo che e' in me gia' pensava a una versione innovativa, decisamente nonstandard.  Quindi ne ho trafugati  un po' per i miei scopi.

Giornate infuocate, queste. Poco fa il termometro dell'auto segnava 41,5 gradi. Sia in auto che in casa aria condizionata sepre accesa, "a tutta randa".
Con questi caldi non solo c'e' poca voglia di cucinare, ma anche l'appetito viene a fagliare.
Ho preparato un piatto freddo stuzzicante, che puo' fare da antipasto o da piatto unico.

 Questa ricetta fa parte delle mie sperimentazioni, in particolare sull'uso della spezia Allspices nelle preparazioni salate.

Eccoci qua.   Dopo il necessario mumble mumble ho deciso chi premiare.
Il mini contest era nato da una mia osservazione in giro per i blog: risultava che le donne foodblogger pubblicavano molti piu' dolci che primi piatti.
Inoltre, e me lo hanno confermato in diverse, quando si pubblica un dolce c'e' un'impennata nel numero dei visitatori dei blog.

Oggi e' stata una di quelle giornate che io chiamo "del quasi".

E cosi' siamo a 4.  Era nata come una merenda tra amici, nella campagna tra Firenze e Siena. Faccio subito ammenda e mi tolgo il pensiero: il Goulash propriamente detto e' un umido di carne, e questo non lo e'.
Io ho voluto provare a fare qualcosa di simile con del pesce.  Molto POCO simile.....     Per fortuna che nessuno mi legge in Ungheria.

Stavo guardando il bilancio del mio blog e ho visto che gli antipasti sono 29, i primi 61, i secondi 27.  I dessert sono 34, ma i miei si contano sulle dita di una mano, gli altri sono di amiche non-blogger. 
La prevalenza dei primi piatti e' schiacciante, e si spiega: io vivrei solo di questi.

Perche' quasi caraibiche? Semplice, ho voluto utilizzare una spezia che una nostra amica ci ha portato da un suo viaggio da quelle parti. Con delle costolette di agnello rimaste in frigo si puo' fare un secondo veloce, saporito e profumato.
Il segreto di questo piatto e' l'olio alla menta. O lo si compra, ma non e' facile trovarlo, o lo si autoproduce.
Farlo e' semplice: serve della menta fresca in vasetto, preso al supermercato, e dell'olio e.v.o. leggero. Memore delle "torpedini" della mia gioventu' ho voluto provare a fare qualcosa di simile, da offrire come ultimissima cosa a fine pasto. Come un bicchiere della staffa, appunto.

Ne ho mangiati di buonissimi l'ultima volta che sono stato da Lisa   (la mia chef preferita). Erano equilibrati e delicatissimi, leggeri e profumati.

Ho scoperto come puo' risultare buono l'accoppiamento pesce-latticini mangiando dalla mia chef preferita, Lisa.

E' tempo di zucca, gente. E io ho pensato a due ricette un po' diverse dal solito. 
La prima l'avete vista sopra, e' una crema di zucca al coriandolo e uovo. La foto mi piace particolarmente, cosi', essenziale.

Sbagliato!!!  Niente pomodoro, l'aspetto trae in inganno.

Chi non mi conosce sappia due cose: 
1) - A me in cucina piace inventare  -cioe' creare- e non fare ricette di altri, sia pure un po' modificate. Qua sopra sono mostrati i due protagonisti della serata del 26/10: Voiello e l'Olio evo.
Al ristorante Convivium ci siamo ritrovati in 50, tra foodbloggers, accompagnatori e chefs. Chi mi conosce sa che per i dolci sono negato. Per questo ospito volentieri le ricette di amiche che non hanno ancora un loro blog.
